The secret to this baked popcorn chicken is potato chips. The chips has enough fat while the potatoes is starchy and makes for a crispy crunchy outer coating. Since its baked, its easy to make. I would not say that its healthy but its damn sure tasty. This is something I make whenever I crave for fast food. Potato chips is the secret ingredient that gives this dish a superb crunch. Take a bowl and add in the potato chips and four slices of bread. I have used regular bread for making the bread crumbs. If you have ready made bread crumbs, grind the potato chips and then add the bread crumbs. For a super crunchy pop corn chicken, try making this recipe with panko bread crumbs. I did not have panko at home. So I have made it with regular bread crumbs. This recipe is very forgiving. Use whatever you find at home.

Grind the chips and the bread crumbs to a coarse powder. Its very important that the powder is coarse and not fine. Grind in batches if necessary and use pulse mode in the mixie. Do not over grind.

The coating should be coarse. So keep an eye on the texture while grinding. Set aside.

Now we will make a dry rub for marinating the chicken for making popcorn chicken. Take a small bowl and add in all the ingredients listed under dry rub.

Mix everything to combine. Set aside.

Now we will make a wet marinating liquid for making popcorn chicken.. Add in all the ingredients listed under marinating liquid in a small bowl

Whisk well to combine.
